Grape Jelly

Grape jelly is a classic homemade preserve with a smooth texture and rich flavor. Making your own grape juice gives the jelly a deeper, more natural taste, and proper canning allows it to be stored for months without refrigeration.

Ingredients:

 sugar   4 cups
 water   1/2 cup
 lemon juice   2 tablespoons
 grapes (to yield 5 cups juice)   about 4–5 pounds

PREPARE JARS

1. Wash jars and lids with hot soapy water. Rinse well.

2. Boil jars for 10 minutes to sterilize. Keep jars hot until filling.

MAKE GRAPE JUICE

3. Wash grapes thoroughly. Remove stems and discard any damaged fruit. Place grapes in a large pot. Add water.

4. Bring to a boil, then reduce heat and simmer for 10–15 minutes, crushing grapes as they soften.

5. Pour mixture through a fine sieve or cheesecloth. Let juice drip naturally (do not squeeze for clear jelly). Measure juice—use 5 cups grape juice for this recipe.

MAKE JELLY

6. Pour 5 cups grape juice into a clean pot.

7. Add sugar and lemon juice.

8. Bring to a strong boil over medium-high heat, stirring until sugar dissolves. Boil rapidly, stirring often, until jelly reaches setting point (see below).

HOW TO KNOW JELLY IS READY (IMPORTANT) (Stop cooking once it reaches this stage)

Spoon test: jelly falls in thick sheets, not drops.

Cold plate test: chilled drop wrinkles when pushed

Temperature: about 223°F (106°C)

FILL AND SEAL

9. Pour hot jelly into hot jars, leaving ¼ inch (0.5 centimeter) space.

10. Wipe rims clean.

11. Place lids and screw bands until fingertip tight.

12. Turn the jars upside down (ensuring they are tightly sealed) onto a towel, cover them with a second towel, and let them cool to room temperature (I usually leave them overnight).

STORAGE

13. Store in a cool, dark place. Shelf life: up to 1 year unopened. Refrigerate after opening.

TIPS:

- do not squeeze juice for clearer jelly

- slightly underripe grapes give better setting

- skim foam for a cleaner look
