Chocolate Pancake Roll with Prunes

Author: Lu

This elegant chocolate pancake roll combines thin cocoa crêpes with a creamy filling, tender prunes, and a rich chocolate ganache. The roll is chilled until firm, then covered with chocolate and finished with chopped nuts. It is a beautiful make-ahead dessert—the layers become even more flavorful and easier to slice after several hours in the refrigerator.

Ingredients:

• sugar   2 tablespoons
• salt   a pinch
• water   100 ml
• butter   45 g
• vanilla extract   1/2 teaspoon
• All-purpose flour   150 g
• milk   300 ml
• eggs   4
• chocolate   85 g
• heavy cream   100 g
• cream cheese   6 tablespoons
• cocoa powder   45 g
• prunes   100 g
• dulce de leche (boiled)   3 tablespoons
• nuts   60 g
• additional butter or oil   for cooking the crêpes

1. In a large bowl, whisk the eggs, sugar, salt, and vanilla extract until well combined.

2. Add the milk and whisk until smooth.

3. Sift the flour and cocoa powder into the egg mixture. Whisk until the batter is smooth and free of lumps.

4. Melt the butter and let it cool slightly. Add it to the batter and mix well.

5. Let the batter rest for 10–15 minutes. The batter should be thin enough to spread easily across the pan. If it seems too thick, add a tablespoon or two of water.

6. Heat a nonstick crêpe pan or skillet over medium heat and lightly grease it with butter or oil.

7. Pour a small amount of batter into the pan and immediately swirl the pan to spread the batter into a thin, even layer.

8. Cook for about 1 minute, until the surface is set and the edges begin to pull away from the pan.

9. Carefully flip the crêpe and cook the other side for about 20–30 seconds.

10. Transfer the crêpe to a plate and repeat with the remaining batter. Stack the crêpes on top of one another and allow them to cool completely.

11. Place the prunes in a small bowl. Pour 100 milliliters of boiling water over them and let them stand for 15 minutes.

12. Drain the prunes thoroughly and pat them dry with paper towels.

13. Cut the prunes into small pieces.

14. In a medium bowl, combine the room-temperature cream cheese and dulce de leche. Mix until smooth and creamy.

15. Lay a large sheet of aluminum foil on the work surface.

16. Arrange the cooled crêpes on the foil, overlapping their edges slightly to form one long, continuous layer.

17. Spread the cream cheese filling evenly over the entire surface of the crêpes.

18. Scatter the pieces of prune evenly over the filling.

19. Starting from one long side, carefully roll the crêpes into a tight, even log, using the foil to help shape the roll.

20. Wrap the roll tightly in the foil and refrigerate for at least 3–4 hours, or preferably overnight.

21. To make the chocolate ganache, place the chocolate in a heatproof bowl.

22. Heat the heavy cream in a small saucepan over medium heat until steaming and just beginning to simmer. Do not boil.

23. Pour the hot cream over the chocolate and let stand for 1–2 minutes.

24. Stir gently until the chocolate has completely melted and the ganache is smooth and glossy.

25. Remove the pancake roll from the refrigerator and carefully unwrap it.

26. Place the roll on a serving plate or wire rack and spread the warm ganache evenly over the top and sides.

27. Sprinkle with chopped nuts while the ganache is still soft, if desired.

28. Refrigerate for another 30 minutes, or until the chocolate coating has set.

29. Let the roll stand at room temperature for about 10 minutes before slicing.

30. Cut into slices with a sharp knife and serve.

SERVING IDEAS:

- Serve chilled with coffee or espresso.

- Add a small spoonful of whipped cream beside each slice.

- Serve with fresh berries for a contrast to the rich chocolate.

- Dust lightly with cocoa powder just before serving.

- Add a few thin strips of prune or chopped toasted nuts to the plate as a garnish.

TIPS & VARIATIONS:

- Make the crêpes as thin as possible; thin, flexible crêpes make the roll easier to shape and give it more visible layers.

- Let the crêpes cool completely before adding the filling. Warm crêpes can soften the cream and make rolling more difficult.

- Pat the prunes very dry after soaking so they do not add excess moisture to the filling.

- If the cream cheese mixture seems too soft, refrigerate it for 15–20 minutes before spreading.

- For the neatest roll, overlap the crêpes by about 2–3 inches (5–7 centimeters) rather than leaving gaps between them.

- Roll the dessert firmly, but do not press so hard that the filling squeezes out.

- For cleaner slices, use a sharp knife and wipe it clean between cuts.

- Walnuts, pecans, hazelnuts, or almonds all work well for the topping.

- For a richer flavor, lightly toast the nuts before chopping them.

- The finished roll can be refrigerated overnight, which makes it especially convenient for entertaining.
